Hi Rachel, your pies might not brown up quite as much with papers, and the sides might not look quite as nice, but it should work. The papers might also make forming the crusts a bit more difficult. I would recommend greasing the papers lightly with baking spray so the papers are less likely to stick. I've seen another blog post that recommend using a strip of parchment paper in each well to help make getting the little pies out a bit easier, so you might want to try that method, which shouldn't alter the forming/baking quite as much. Be sure to loosen the pies gently around the edge and turn them a bit before lifting them out. Honestly, I trust PJ on this one and I would try it once without the papers and see if you have any difficulties.
