Hi Maya! Here's what we've got for you.
1. Yes, the 40gram weight is just for the dough.
2. If the dough seems a bit sticky, we've often found chilling it in the refrigerator for a bit makes it easier to work with.
3. We've also found that when we press the dough in a bit too much, it can make the dough just thin enough that the filling leaks out, and sticks. Press it in a little less, and you should be OK.
