These little pies turned out delicious and so cute! My husband especially loved the crust to filling ratio on these - there's a lot more crust than a standard piece of pie! I made 6 mini pecan pies and 6 mini cherry pies (used 1/3 of the filling for Mr. Washington's cherry pie) for a small Thanksgiving. I precooked the filling for the cherry pie similar to the process for the apple pie, cooking the filling until it got to a syrupy consistency and then baking for the same time/temp as the apple pie. For the pecan pie, it looks the instructions don't include what to do with the melted/cooled butter. Based on the instructions in the original recipe, I stirred the butter into the filling after combining the wet and dry ingredients. Thanks for a wonderful idea with these mini pies. I'll definitely be making more!
