Hi Brian, I don't think anyone was suggesting adding instant yeast to a sourdough culture, although we do sometimes suggest the option to add a little yeast to your bread recipe if you're worried your starter isn't active enough to raise your bread. You're right that adding instant yeast will likely speed up the fermentation process and may result in milder flavored bread.
