HAVING people add INSTANT Yeast to the Sourdough is bad information. The dominate yeast takes over which is the instant yeast and destroys the sourdough flavor. Years ago brewing beer we mixed two yeast. Guess what only one wins.. It was an experiment I was after the large hole crumb but side by side my flavor is not there. Stick to just the sourdough culture and settle for a longer ferment time. I am thinking the trick is in the handling of the dough and the hydration.
