This is something I struggle with, because you also have to factor in how long it takes your oven to preheat. Mine takes a little over a half hour, so I need to aim for even less than your 75–80%. I think I need to do more trial and error AND write down each time I make a change. Mind you, my SD bread is delish, but I would like the crumb to be a little more open. But not so open that everything I spread on it falls through the holes.
