Hello. I don't know what you mean when you say "the point where your dough has risen about 75% to 80% of its full height". How would I know this without knowing when it would reach 100%? More helpful would be to know what percentage more than the starting height it should reach, so for example, when the dough has increased by 40% of its starting height.
