It's all up to you, Harvey! If you enjoy having two starters, then keep at it! But if it's feeling daunting keeping up with two cultures, then you can most certainly just keep one on hand. A rye starter will lend more flavor to the bread and typically ripens faster than an all-purpose-based starter. I might suggest using your rye starter in a few of the recipes that you normally use your all-purpose starter in and see how you like the results. Remember, it's your kitchen — you're the boss!
