Hi Kylie! We haven't tried that ourselves but we don't see why it wouldn't work out! The scones my have a slight cakieness to them, but apple don't have a ton of liquid in them so it shouldn't be too much of a change in texture. We'd suggest using 1 cup of small diced apple and 1 cup of chips, sweet bits, or crystallized ginger. You might also enjoy our Fresh Apple Cinnamon Scones. Happy baking!
