I've made this recipe as shown, and also variants using leftover winter squash, as well as using diced, dried mango and walnuts instead of the ginger. You can also substitute 1/2 cup maple syrup or honey for the sugar (added to the liquid ingredients) and bump up the flour by a few tablespoons.
