And there's a KAF baker named Martin who's got some really wonderful baking videos on YouTube. I just started watching him this month (this was the end of 2021 and I realize your entry was before that). He has one suggestion I liked, and it was such simple common sense: it was for another bread dough, challah, but I think the principle would be the same. He simply said if the bread won't stick to the counter at the far end, we can put a weight on it to help. So simple, and I'd never thought about it. Doh! LOL!
