Hi Jenny the Cowgirl, if you want to make this recipe into four smaller challahs they are going to be mighty small! While not impossible, you're basically talking about almost individual sized challahs with a weight of about 258/9.1 ounces each. This means that you would need to divide the initial dough amount (759g) into 12 pieces of about 63g/2.2 ounces each. I think when working with such small amounts of dough, you'll find you can only roll them out so far, so you'll probably end up with rectangles that are more like 4" X 2" or possibly 6" X 3" (at most). The dough will tell you how far to go because you don't want to roll them so thin that they rip or won't hold together when you roll the filling into the middle of them. Baking time for these 4 small loaves will likely be around 18-25 minutes, but I would check early and often and look for the same internal temperature of 190F if you have an instant read thermometer.
