It sounds like the dough might be a bit too dry — we recommend either using a kitchen scale to weigh your ingredients or using the fluff and sprinkle technique for measuring flour in volume. You're certainly welcome to add the butter after a few minutes of kneading if you'd like as well. We'd recommend trying the other suggestions before changing the amount of egg in the recipe. If you still feel like your dough is too dry to come together properly, we'd recommend adding a tablespoon or so of additional milk. We hope this helps!
