I make a top- notch pizza in my home oven. I use a pizza screen to place my pizza dough on with the sauce .onthe middle shelf oven preheated 475F for 12 minutes. I then remove the partially baked pizza from oven. Switch oven to high broil & pizza stone already just below the broiler coil.
My pizza then is removed from the screen & placed directly on the wooden paddle. Now I sprinkle on the cheese & topings. Slide the pizza on top of pizza stone, rotating every 15 seconds by 1/4 turn until it has a great color (the cheese & toppings are also ready) I preferred pizza dough is :
Same day dough recipe:
2 -16” pizzas

2 cups 00 pizza flour 334g
1/2 teaspoon yeast
2 cups water 514g
2 teaspoons salt
2 heaping cups bread flour (make those heaping cups big, about 1.25 cups each. 342g

Rest times:
6hr after mix
60-90min after balling
