I totally agree with another person's comment. The instructions on the bag are not the same as what is given on your website. The bag instructions do not include the flouring of the dough and the stretch and fold steps. This missing info seems crucial to handling the very wet dough and shaping into two balls for the second rise. If I hadn't investigate further on your website, I would have missed this step.
