Hi Felice, adding whole wheat flour or whole grains to this recipe will make for quite a different result, so I would try to keep these substitutions to a minimum (1 cup or less). I think whole wheat flour will incorporate more easily into this recipe than whole grains, but whole wheat flour does ferment faster than white flour, so this may shorten the overnight rise time a bit. If you're looking to make whole grain pizza dough, this recipe might be an easier and more predictable starting place.
