Hi Rosemary, from your description of the flour you successfully used in the past that was a combination of both wheat and rye, I would guess that our Rye Flour Blend would be the best substitute. It is also a combination of rye flours and wheat flour. Keep in mind you may need to adjust the amount of liquid in your recipe in order to achieve your desired dough consistency when substituting a new flour into this recipe.
