We're sorry to hear that you had some trouble, Stee! Did the batter ever double in volume? We wonder if they became over-worked, it should only take about 5 or so minutes for the mixture to gain volume, lighten in color, and thicken. The whole eggs won't become fluffy and the way egg whites do but they'll foam and lighten in color and consistency considerably. The age of the eggs shouldn't impact how they whip up. We hope this can help!
