Hi Elaine, I'm afraid Kelly is unlikely to see your questions, so I would suggest either using the greased bowl, or letting the dough rise on greased parchment paper and lifting it out and setting it into the preheated Dutch oven. If you prefer not to add steam to the oven, you could use the cover on the Dutch oven and remove the lid about halfway through the bake.
