@KRISTIN Z in the past I used AP flour four sourdough, dough always sticky and tore easily with gummy baked product. I gave up thinking if that's what sourdough supposed to be, than it wasn't for me. A decade later, I tried bread flour for sourdough. Nowadays my crusty white loaves are always fluffy. Acidity breaks down gluten, and need strong flour (in my case. Might not applicable to everyone)
