Hi Jen, as far as overall results it is typically best to stick with the ratio of flour that is listed in the recipe. You are welcome to try out this recipe using 100% whole wheat flour, but the loaf will not rise as high and may turn out a bit more dense. I would also recommend adding a few additional TBSP of water if using 100% whole wheat flour. Hope this helps!
