I’m in the process of making this bread now. My daughter helped me throw The dough together, and it’s sitting on counter now. I can’t wait to see what it looks like tomorrow. This method confirms my suspicion that a sourdough loaf is nothing more than a big batch of starter. I always wondered if all that precise timing and fussing recommended in nearly every blog was necessary. After all, sourdough has been round forever. Our forefathers (or foremothers, more likely) didn’t have the equipment or time for that much precision. Why would be necessary now?
