Hi Jay, I'm a little concerned that this might be too much dough for your clay bread baking bowl, which we say accommodates about a 1 1/2 lb loaf. This recipe results in about 2 1/2 lbs of dough, so quite a bit more than that. I'd also be a bit worried about the potential for sticking when this very wet dough spends several hours in your bowl. If you want to try it, I would reduce the recipe to about 2/3rds the size (multiplying the weight of each ingredient by .66 will yield a reduced recipe), and line the bowl with sprayed parchment paper (sprinkled with seeds, if you like) to help guard against sticking. If you crumple the parchment paper up, it will conform to the bowl shape, and then it will be easier to spray the parchment as well.
