I just made some lovely bread with starter that had been sitting in my fridge for at least 2 months. Used the basic process, but used buttermilk and an egg instead of water, and added melted butter because I didn't want to use oil. Baked it in a 4 x 4 x 8" pullman pan without the lid. Used a mix of whole wheat and rye flours with some added gluten. Stuffed some Swiss cheese in the center, and covered it with my own seed mix. This turned out to be glorious bread, and the 4 x 4 size makes excellent sandwiches! Experiment! Do your own thing! Bread is very forgiving. It'll be fiiine!
