I find this hilarious! My guy and I were just talking about how there needs to be a blog debunking the mystic of sourdough. I just started baking sourdough bread this year after my son brought some of his starter home at Christmas to share. I was taken aback when I started reading recipes - the different opinions, the rules that must not be broken, the difficulties, the disasters shared, the need for such precision (grams, ratios, amount of starter, the multiple steps, the different timings!!). I pieced together something that met my schedule and available ingredients, the dough was sticky as all get out, but it came out beautifully. After multiple loaves, all made with imprecision because I too am a very casual baker, I have decided that the sourdough baking community is full of baloney. Every loaf has been delicious and beautiful and ooh, the aroma. The sourdough community needs a new rallying cry: Sourdough for Everyone! Sourdough for Dummies! Sourdough crackers and pancakes have become part of my repertoire. I look forward to trying some of your ideas.
