This was my first time baking sourdough. I don't own a dutch oven and of course every iron skillet I have was too big. I did not have whole wheat flour so I just used the unbleached. I learned this, start it late at night so you don't have to bake at sunrise! I did the rise in a bowl oiled. I used a vintage pyrex casserole bowl to bake it in. Where I got into trouble was transferring the dough to the baking dish, it kinda hung mid air and of course my scraper was across the room so it finally landed probably upside down. By this time the parchment paper was hanging out of the bowl. Well, it turned out I didn't even need it. I will make this again for sure.
