I love this new blog! I've been an avid sourdough baker for about four years in this exact vein. I will occasionally geek out on my bread, but I am constantly impressed with how sourdough can be such forgiving medium (once you get the feel for it). This post was great in showing not just a simple recipe, but how to think about toying with a recipe that has been handed down to you. I hope this blog has a good long run, us casual sourdough folks need to spread the good word!
