Loved the whole write up! Just shared starter with a friend and I tried to get her started, but when I got this in my email from KAF I immediately sent it to her. Cut down her stress by a mile. I will bookmark and keep this handy for future rookie bakers!
Also, I live near the Gulf Coast of Texas and my first few loaves spread like crazy. I invested in a KAF baking bowl and it has solved all my problems. I don't even cover it in my convection oven. I do turn it around halfway through the bake. Makes for a beautiful, well formed loaf with a yummy crust!
