This bread worked magnificently without the distatic malt powder. The tang and texture are what I remember loving about the San Francisco sourdough bread from years ago. The use of a cast iron frying pan stopped the side spread so it rose beautifully. This will be a regular for me, all you need is time to let it do its thing.
