You can certainly use Bread flour to make nut rolls, although if your recipe usually calls for Unbleached All-Purpose flour, you may find you need to add a little extra liquid, since this higher protein flour will develop a bit more gluten and also absorb more water. In order to keep the dough soft and supple, consider adding up to two teaspoons extra liquid per each cup of bread flour substituted.
