Hi JoAnn! It hasn't been our experience that using bread flour makes for a taller cookie. If you're looking for a cookie that doesn't spread as much, you can try chilling the scooped cookie dough before baking or baking the cookies straight from the freezer. Or you can play around with reducing the sugar in the recipe a tad, which will make for a cookie that spreads less. We hope this helps and happy baking!
