Marilyn, there are many different techniques used in making pastry doughs. Some recipes use grated butter, some use one size butter pieces, either large or small, and some use a two-stage, two size method for incorporating the butter. All seem to work. My suggestion is to follow a recipe and see which one works for you. The choice is yours.
