Read on a little further, Sam! PJ does offer some suggestions for changing up the flour in the crackers and also how to add spices, herbs, seeds or cheese directly to the dough; she even gives some recommended amounts.  Relatively dry ingredients will work best as add-ins, and you'll want to keep the quantity fairly small, so the dough still holds together well.
