Hi Nancy, sounds delicious! 

I would recommend peeling one small/ medium sized beet and microwaving it for 1 minute or until it is soft. Then, you will want to blend the softened beet with the butter called for in the recipe in a food processor or blender until smooth. From there you can continue with the recipe as written, however you will want to add between 1-3 tablespoons of flour to keep the dough relatively the same consistency/hydration to adjust for the added liquid in the beet.
