I make these often with sourdough discard. I treat the cracker dough like pasta dough: put the dough through my pasta rollers until desired thickness, lay the cracker dough sheets onto parchment lined sheet pans, cut to cracker size with a pizza cutter or, ideally, a decorative pasta cutter, and bake.
