Natalie March 19, 2023 at 12:11am Whipped aquafaba deflates at higher temperatures. That's why it works for meringues but not angel food cake, and probably why it melted those cookies into sad pools. I don't think you can really go above 200 degrees if you want to keep the lift. Reply
