Thanks for the post! I’d heard of aquafaba but haven’t used it yet. This is very timely as a close friend just discovered her child is allergic to eggs. The what-doesn’t-work section is especially great, so I don’t waste time or baking hopes on something! Do you happen to know if aquafaba can be subbed for soufflés? I make chocolate and spinach/cheese souffles pretty often.
