Wish I had stopped at 25 minutes! Mine are waaaaay too soft, and the syrup in the recommended ratio was far too much! I could have done double the peels!
Not complaining - they taste great, but are very, very limp - not fairly firm and just a bit crunchy as I remember from childhood! I'm commenting mainly to ask if perhaps these problems were due to 1) the freshness of the fruit and/or 2) whether it was tree-ripened, as opposed to picked "before its prime" to be shipped cross-country?
I'm in Florida, and the 3 Ruby Red grapefruit I used were very fresh. They also lost a little more flavor than I'd have wanted, with only the 3 boils (glad I tasted them before a 4th or 5th!).
I'll make them again, because I see what made them a bit disappointing!
Don't toss the water from the 3 boilings until you've checked to see if it's a good (that is, won't harm the beneficial insects) natural pesticide to spray in your garden!
