One caveat on homemade candied peel I haven’t seen addressed: make sure your citrus fruit has never been sprayed with any pesticide or other inorganic spray. The chemicals in the spray do not wash off, it becomes embedded within the peel, and when boiled, will ruin a batch of candied peel with off taste and color. These spray chemicals aren’t meant to be heated, much less boiled. Take care.
