I made candied lemon peels with this recipe and they taste great but they're kind of tough. They're delicious to nibble on, but I wanted to use them in a cannoli filling and am afraid they'd be too...distracting, texture-wise. (aka maybe get stuck in your teeth!). Any ideas?
PS: My Mom made candied orange and grapefruit peel every Christmas when I was little and my memory is that they were chewier.
