Great tip about boiling out the bitterness: Thank You. As a Diabetic, candies fruit has never been an option. until I made my own. Instead of regular sugar, I simmered the peels in a sugar free syrup like 'KetoseSweet Liquid' (which is like a sugar free simple syrup). Saved the liquid for syrup. Found dried mixed fruit & berries online. Made an excellent 'Gluten Free & Keto Panettone' that I got at gnom-gnom.com/gluten-free-keto-panettone.
