Hi there, Paula! As Rossi mentions in this article, "Typically fruits with thicker peels make the best options for candying, as thinner skinned fruits like clementines can sometimes become tough after boiling." You're welcome to try with clementine peel but I'd recommend just making a small test batch to try it first. Happy baking!
