When we were in Florence we were told the reason they omit salt in their bread goes back hundreds of years. The city of Pisa put an exorbitant tax on the price of salt. Rather than pay, the rulers of Florence challenged their bakers to invent a recipe that didn't require salt. Perhaps this is apocrvaphyl?
