Thanks for the information. I have high/elevated blood pressure and can't have salt. My son put me onto yeast-free bread baking but the recipe calls for 2 teaspoons of salt: danger! I may have a trial using just one teaspoon of salt and see how it works out. I'll check with my doctor and dietician. I already know the no-knead bread is awsome as I've baked a loaf. My hands are 'shot' and I can no longer knead dough and had given up baking until my son told me about no-knead bread which he and his wife bake daily for the family.
