My husband has a heart condition. He must have a very low sodium diet and most breads are actually very high in sodium. In a typical sandwich, you might end up with 350-450 mg of sodium just in the bread, which is half of what he's allowed in a day. So we started playing with our homemade bread recipe. Here in Atlantic Canada, it was common to add molasses to bread, so we pulled out the salt, but have kept tons of flavour with molasses - and upped the nutritional value with chia seeds. You have to play a bit with the liquid to dry ingredients ratios, but you 100% CAN make super delicious bread without salt. (And if you had a mix of 1 Tbsp garlic powder, onion, powder, basil, oregano, and rosemary, you can turn it into CRAZY DELICIOUS herbed loaves!).
