Hi Gail! We're so glad you have been baking successfully without salt and that you've shared this with us! We appreciate your suggestion of blind test as well. It is certainly not our intention to mislead anybody with our content. While we explain the numerous benefits of adding salt to bread dough in this blog post, we also illustrate some of the recipe exceptions and even tips for leaving salt out entirely. The intension of the blog-post is not to say that salt-less bread can't also be great. Rather, the mission here is to equip the home baker with the technical reasons for adding salt to give them the most agency when adjustments need to be made or special diets need to be considered.  Happy Baking!
