I have been baking salt free bread for about 18 years now because my husband requires a strictly salt-limited diet. Not only has it worked well, the bread has been been seriously praised by guests (as in ‘wow this bread is terrific) even when they were not told that I made it. So, this article seems to me to be extraordinarily misleading and damaging for those who need to be salt limited. It might be that there is some experimenter bias going on. It would be worth it for the author to redo the test not knowing the salt content.
