Carol Field has a version of tuscan bread in her book the Italian Baker , it is a traditional artisan saltless bread that is very much worth the effort. Made it many a time. It has the deep pure flavor of the grains which is a delight. I added fresh herbs and wow.. Saltless yes but tasty.
