I've been a strictly KAF baker for years. Unfortunately, congestive heart failure dictates that I cut the amount of sodium in my diet to 1500 mg per day. That's not much sodium when you look at the whopping quantities found in the average American diet. Commercial bread, even good-quality commercial bread, can have between 180 and 270 mg per slice. Even a healthy sandwich or slices of toast become a minefield. I'm on the lookout for bread recipes that would at least cut that down to a dull roar. I realize it's not possible in most recipes to just delete the salt. I'd like to be able to turn it into rolls, too, if need be. I'll try the Tuscan Bread and take a look at the Everyday Breads as well.
