Baking is my identity, so when I had to drastically reduce the use of butter and saturated for health reasons, I was devastated. Over the past few years, I have learned and experimented. I can now bake an oil pie crust that we prefer to the butter crusts I once made. I have modified cookie and cracker recipes. (My changes to your Sourdough Whole Wheat Crackers have made it a completely new, and healthier recipe for me.) What continues to elude me is a roll-out sugar cookie that would let me use my extensive collection of cookie cutters again. I particularly miss them at holidays.

I would like to see King Arthur include more recipes that fit into the low-saturated fat category. King Arthur is good about addressing the needs of vegan and gluten-free customers. I encourage you to think about the people who have given up baking simply because they do not know how to make it work with health concerns.
